Frying, roasting and heavy spice work all put oil droplets into the air. They land on cabinet faces, upper walls, ceilings, light fixtures and the HVAC return, then hold aroma compounds for years.
Find the film
Run a clean finger along the top of an upper cabinet or the wall above the range. If it drags, that is your source.
Degrease before you deodorize
No treatment works over a grease layer. Surfaces have to be degreased first, including the hood filter and the ceiling above the range.
Do not forget the return
Kitchen air goes into the return and gets distributed everywhere. Linens smelling like dinner is a duct problem.
